Made from grapes that come from the beautiful vineyard ¨Viñedo Tagorito¨ which is located at 65m above sea level, being a vineyard with a lot of coastal influence. Whole cluster pressing with a very soft and slow pressing cycle, champenoise style. Racking of the must after 48 hours of cold settling. Fermentation and aging in a single 300L French oak barrel with a very light toasting level, specially selected for white wine. Aged on fine lees for 12 months. This wine is usually aged in bottle for 2 to 3 years before release.
