Albillo Criollo 2022

Produced with the Albillo Criollo variety, the grapes come from a beautiful vineyard called ¨El Pinalete¨ at an altitude of 850m. Whole cluster pressing with a very gentle and slow pressing cycle, champenoise style. Racking of the must after 48 hours of cold settling. Fermentation in a 720L egg-shaped concrete tank and in a 600L used Stockinger barrel. Aged on fine lees for 11 months and then aged for a further 12 months in the bottle.
